The crunchiest Indonesian vegetables fritter recipe - In this post I will share you the recipe for one of the famous fritters in Indonesia, it's called bakwan.
If you visit Indonesia, it's easy to find this cuisine. Bakwan are usually sold by traveling street vendors.
The ingredients of bakwan are a mixture of flour and vegetables. The vegetables usually use shredded cabbage and carrots, battered and deep fried in cooking oil.
However another variation, some people add whole shrimp to the batter, it's called bakwan udang. Or using corn (bakwan jagung) and spinach (bakwan bayam).
In West Java, for Sundanese people, bakwan is known as bala-bala. It is similiar to kakiage tempura (Japan) and ukoy (Filipino).
Vegetables fritter ingredients and seasonings:
~ 1 piece of cabbage
~ 2 long beans and 2 green beans (this is optional, you can replace it with carrots or other vegetables)
~ 2 cloves of garlic
~ 1 shallot
~ 2 scallions
~ 250 gr wheat flour
~ 100 gr rice flour
~ 3 tablespoons cornstarch
~ stock powder
~ a little baking soda
~ salt
How to make delicious and crunchy Indonesian vegetables fritter :
• Slice cabbage as well as long beans and green beans.
• Slice the scallions too.
• Wash all vegetables, then drain.
• Then enter the flour, rice flour and cornstarch into the washed vegetables.
• Then prepare the spices: garlic, shallot and salt. Grind it until smooth.
• Put the ground spices into the flour and vegetable mixture.
• Also add sliced scallions.
• Add stock powder to taste.
• Add a little baking soda.
• Then add water little by little while the batter is stirred until evenly distributed. The batter should not be too thick, nor too runny.
• Heat the oil, then fry the batter in deep fried cooking oil until golden yellow. Turn the bakwan so that the fritter cooks evenly.
• If it is ripe, remove it.
• Serve the delicious, savory and crunchy hot vegetables fritter (bakwan) with peanut sauce or coffee. I guarantee, it's so yummy...
